For the first time in what seems like decades my New Years Resolution had no mention of what I couldn’t eat. This isn’t because I magically found my abs either. It’s because this year I am doing things a little different. My 2019 word is ‘Simplify’. And that is what I am going to do.
I read an interesting article recently and it basically said the most successful people eat the same thing daily for breakfast. By limiting mundane decisions you are leaving yourself refreshed to being able to make the big decisions. So as you can imagine at the end of the day when no decision about dinner has been made and you are all out of decisions, dinner becomes a chore and we go into survival mode. You go to bed hoping the kids don’t mention what they ate for dinner the next day at school.
So I have put together a weekly menu that we will literally eat every week all year. And it’s not boring and offers a ton of flexibility (even for picky kids/husband). It also eliminates the endless “what are we having for dinner tonite” chanting and creates a routine everyone can come to expect and love. Introducing my kids to new foods is super important so I love the flexibilty.

Wed- Waste Not Wednesday (aka leftovers)
Thursday- Comfort Food
Friday- Family Date Night
Sat- Slow Cooker Sat
Sun- Spaghetti Sunday (Italian)
Spaghetti Sunday – Easy Italian Recipes
So here are some easy Italian recipes to get the wheels turning. Have fun with it and let the kids pick some days too.

-Zucchini Noodles, Marinara Sauce, Meatballs (low carb life)
-Spaghetti, Marinara Sauce, Sausage (meal prepper? Make more it’s even better on day 3)
-DIY Pizza Night (that is cauliflower crust and they don’t even know it)
-Pizza Potatoes, yep loaded baked potato Italian style
-Italian Wings
-Minestrone Soup
-Italian Quesadilla : yep exactly what it sounds like replace pizza crust with tortilla and fold in half .
-Bloody Marys : oops, how did that slip in there.
