A month into school and I am finally getting the hang of getting these kids up and out the door on time and without yelling. So smooth sailing over here. I’ve also realized my kids don’t love variety. And after the 3rd week of making oatmeal daily for kids, I have come to the conclusion that oatmeal is a great way to start the day. And it’s not that the 3 minutes in the microwave is going to make or break our routine, it’s more about the 10 minutes it needs to cool down after making it that could throw us off orbit.
So overnight oats became an instant success amongst kids and moms alike. I was able to meal prep for the week on Sundays and have breakfast within an arms reach for the kids in the morning. Does that mean I can sleep in now? Probably not, but it was worth a shot.
Since today is the Oct 1st. I assumed it would be the perfect time to play around with our overnight oats. Pumpkin pie flavor is everywhere right now so why not make a basic version for Fall flavored overnight oats. So Pumpkin PIE Overnight Oats Recipe was born. I had to share them with you. My basic pumpkin pie loving daughter was kind enough to taste test these overnight oats for me and they are kid approved. Even the super basic, finicky kid.
Couple notes before we begin. My kids don’t typically add sweetener to their overnight oats so we were ok without maple syrup, you can always make without and add later if it’s not sweet enough for you. Also, just to be clear the one-minute oats are not the same as Old Fashioned Oats. One time I tried to make that substitute since it’s all I had on hand.
Pumpkin PIE Overnight Oats Recipe
Pumpkin PIE Overnight Oats Recipe Ingredients
4 Ball Glass Mason Jars, 8 Ounces
2 cups of milk (or milk alternative)
2 cups of Bob’s Red Mill Gluten Free Old Fashion Rolled Oats, 32 Ounce
1/2 cup of pumpkin puree
1 tsp cinnamon
1/4 tsp ginger
Pinch of allspice
1/2 tsp vanilla extract
1/4 cup of maple syrup (optional)
4 scoops collagen peptides powder
Optional: chopped nuts, walnuts or pecans preferred or choc chips and a dollop of Greek Yogurt like this family favorite!
Pumpkin PIE Overnight Oats Recipe Directions
- Mix all the dry ingredients together. Oats, cinnamon, ginger, allspice, and collagen peptides.
- Combine all the wet ingredients together and mix into dry ingredients.
- Divide equally amongst the four Mason Jars
- Place in refrigerator overnight.
- Grab and go in the AM.
- This is when I add the optional toppings like yogurt or nuts.
